I served these lamb chops crusted with some harissa spice along side a simple salad and roasted potatoes for a delicious but very easy Sunday supper. If you can’t find harissa, try using a blend of paprika, chili powder, cumin and salt.
Lamb Chops with Rustic Mint Pesto
Meanwhile, mince the mint and green garlic and combine in a small bowl. Sprinkle in a few pinches of flaky sea and then mix in a few table spoons of oil–enough to make a thick sauce.
Heat a large pan over medium heat and add some neutral cooking oil. Sear the chops on each side and take off the heat and allow to rest (or cook longer if you want the chops well done).
Serve with a healthy dollop of mint pesto on each lamb chop.
